Chicken Shawarma Roll

Ingredients:

For the chicken marinade:

  • 500g boneless chicken thighs or breasts (thinly sliced)

  • 3 tbsp plain yogurt

  • 2 tbsp lemon juice

  • 3 cloves garlic (minced)

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 1 tsp smoked paprika or regular paprika

  • 1 tsp ground turmeric

  • 1 tsp ground cinnamon

  • 1 tsp ground black pepper

  • 1 tsp chili powder (optional)

  • Salt to taste

  • 2 tbsp olive oil

For garlic sauce (toum) or garlic mayo:

  • ½ cup mayonnaise or Greek yogurt

  • 2-3 cloves garlic (crushed)

  • 1 tbsp lemon juice

  • Salt to taste

For assembly:

  • Flatbreads, pita, or large tortillas

  • Sliced onions

  • Sliced tomatoes

  • Sliced cucumbers or pickles

  • Fresh parsley or coriander

  • Lettuce leaves (optional)


👨‍🍳 Instructions:

1. Marinate chicken:

  • In a bowl, mix yogurt, lemon juice, garlic, spices, salt, and olive oil.

  • Add sliced chicken, coat well, and marinate for at least 1 hour (overnight for best flavor).

2. Cook chicken:

  • Heat a skillet or grill pan on medium-high heat.

  • Cook chicken slices until fully cooked and slightly charred (about 8-10 minutes), stirring occasionally.

3. Prepare garlic sauce:

  • Mix mayonnaise or yogurt with crushed garlic, lemon juice, and salt.

  • Adjust garlic and lemon to taste.

4. Assemble rolls:

  • Warm flatbreads.

  • Spread garlic sauce generously.

  • Add cooked chicken, onions, tomatoes, cucumbers/pickles, lettuce, and fresh herbs.

  • Roll tightly and wrap in foil or parchment paper.

  • French fries, chili sauce, or a fresh salad.


💡 Tips:

  • For extra flavor, grill chicken on skewers or barbecue.

  • Add hot sauce or tahini sauce for variety.

  • Use store-bought garlic sauce or make toum (Lebanese garlic sauce) if you want authentic taste.
