4 medium potatoes (boiled, peeled, and mashed or roughly chopped)

2 tbsp oil

1 tsp mustard seeds

1 tsp cumin seeds

1 onion (finely chopped)

2 green chilies (slit)

1 tsp ginger (grated)

1/2 tsp turmeric powder

1 tsp red chili powder

1 tsp coriander powder

1/2 tsp garam masala (optional)

Salt to taste

Fresh coriander leaves (chopped, for garnish)

Juice of half a lemon (optional)
👨🍳 Instructions:

Heat oil in a pan over medium heat.

Add mustard seeds and cumin seeds; let them splutter.

Add chopped onions, green chilies, and grated ginger. Sauté until onions turn translucent.

Add turmeric powder, red chili powder, coriander powder, and salt. Stir well.

Add the boiled potatoes and mix everything well so that the spices coat the potatoes evenly.

Cook for 5-7 minutes, stirring occasionally, so the potatoes absorb the flavors.

Sprinkle garam masala (if using) and mix well.

Turn off the heat and add lemon juice if you like a tangy touch.
